Mizunara casks are sourced in small quantities from the sustainably managed, ancient forests of Hokkaido, Japan’s northernmost prefecture. Mizunara oak trees require at least 200 years to mature before they can provide sufficient length between knots to create full cask staves. Known as the ‘Water Oak’ due to its tight grain and highly porous nature, Mizunara allows whisky to penetrate deep into the wood, drawing out complex and distinctive flavors.
Mizunara Oak is known for its sweet and spiced complexity: coconut, vanilla sandalwood, jasmine, incense, and spices such as cinnamon and clove with very low levels of tannin.
